Freezing Pod Peas

Freezing Edible Pod Peas (Sugar, Chinese, Snow Peas or Sugar Snap Peas)
Susan Reynolds, M.S.Select bright green, flat, tender pods. Wash. Remove stems, blossom ends and any strings. Leave whole. Water blanch 1 ½ minutes for small pods; 2 minutes for large pods. (NOTE: If the peas have started to develop, follow directions for green beans. If the peas are already developed, shell and follow the directions for green peas.) Cool, drain and package, leaving ½-inch head space. Seal and freeze.
