Freezing Edible Pod Peas (Sugar, Chinese, Snow Peas or Sugar Snap Peas)

Select bright green, flat, tender pods. Wash. Remove stems, blossom ends and any strings. Leave whole. Water blanch 1 ½ minutes for small pods; 2 minutes for large pods. (NOTE: If the peas have started to develop, follow directions for green beans. If the peas are already developed, shell and follow the directions for green peas.) Cool, drain and package, leaving ½-inch head space. Seal and freeze.
